QUICK MUSHROOM N BELL PEPPERS STEW

Nowadays all I want to do is to hug my pillow tight n sleep till 9 am. But my SH without waking me up questions me like is coffee decoction thr and so on... So without any second thoughts i jus jump up before he starts messing the kitchen. But i will make sure that he makes the coffee for me...

When SH is at home, I always cook something spicy because we don't eat much outside.. we prefer staying home and eat the simplest home food. 

Decided to make a spicy Kerala style stew to go along with Bajra dosa.This was defiently a sooper quick curry / stew when all the ingredients are avbl. This can also make a great side dish for any Indian bread.
What you need:
Mushroom - 1 pkt, cleaned and chopped
Bell Peppers - 1 cup, chopped
Onions - 1 no, sliced
Tomato - 1 no, chopped
Green chillies - 1 nos, slit
Ginger n Garlic - 2 tsp, chopped
Cinnamon + clove + cardamom - 1 no each
Coconut milk - 1 cup
Red chilli powder - 3/4 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1/4 tsp
Curry leaves - 1 sprig
Coriander leaves n Mint leaves - 2 tbsp
Oil - 1 tbsp
Salt as reqd

How to make:
Heat oil in a pan fry the spices add onions, curry leaves, green chillies, ginger n garlic and saute well.

Add all the spice powders, tomatoes and cook till it softens. Now add mushroom n peppers, coriander, mint leaves and stir well. 

Pour in the coconut milk, salt, put in on low flame cover and close the lid and before it starts to boil switch off the flame and serve hot!!

BELLAM TALIKALU PAYASAM / WHEAT NOODLES PAYASAM

This Ganesh Chaturthi m going gaagaa over Andhra m sorry its Telangana n Seemandhra state delicacies.. tis is one yummy n def a unique payasam made of wheat noodles or talikalu. 

Made these wheat noodles from scratch using murruku pressing machine... these are something similar to wheat spaghettis.. I remember watching tis recipe on Abhiruchi cookery show couple of years back.. finally it came into action!!
What you need:
Wheat noodles /talikalu - 1 cup (make dough using 1 cup wheat flour with a pinch of salt and made into soft dough)
Jaggery  - 1 cup, soaked in 1/2 cup water and sieved 
Milk -  1 cup
Cardamom powder – 1/2 tsp
Ghee – 1 tbsp
Nuts n Dry fruits as reqd
How to make:
In a pan heat water with a dash of oil and get em to boil. Add noodles and cook for approx 5 - 7 mins or until done remove from water and cool it.

In a pan add ghee roast nuts n dry fruits until golden and remove aside. In the same pan pour jaggery water and boil until u get one string consistency. 

Bring to low flame add milk, noodles, cardamom powder and bring to medium boil and switch off the flame.

Add the nuts n dry fruit n offer to Lord!!

SAMA UNDRALLU / SAMAI ARISI UPPU KOZHUKATTAI

Ganesh jees fav kozhukattais took a turn this year at my place and so made Andhra spclty called as Undrallu. Made em with Samai rice / Sama (telugu) a sooper easy n no fail recipe!!

Highly nutritiuos and less calorie recipe is the much needed recipe for this festive season. Try this sama undrallu and offer to the Lord.

What you need:
1/2 cup - Sama Rice
1 tbsp - Channa Dal, pre soaked for 30 mins
1/2 tsp - Cumin Seeds
1 tsp - Oil
Salt as reqd
1 and 1/2 cups - Water

How to make:
Heat oil in a pan add cumin seeds once they splutter add channa dhal fry em and add water ans alt and allow to boil.

Add sama rice mix and cover and cook until done. Cool it down grease your hands make em into round ball shaped and steam in greased idli pan for 10 mins.

LEMON CORIANDER HUMMUS N QUICK SANDWICH

Had plans to make bread channa for breakfast n channa masala n phulkas for lunch and cooked channa.. after cooking channa took a big U turn and tis hummus came into my mind... dropped on the idea n made tis sooper easy n flavorful lemon coriander hummus a less oil recipe with very less salt and spices but still flavorful one. 

Ok hummus is done but wats for breakfast?? Sandwiches heyyy yaa i made some wheat toasts ... spread hummus .. and added some chopped veggies .. ahh the the breakfast was done in no time..

It works as a perfect spread on phulkas too..  So spread'ed tis hummus on phulkas and made okra curry ahhh packed SH's lunch n he was happie.. n mee too was happie for simplifyiing my work.. 
What you need:
Chickpeas - 2 cups, cooked
Fresh Coriander - 1 bunch, washed n roughly chopped
Garlic pods - 2 nos, roughly chopped
Lemon juice - 2 tbsp
Extra virgin Olive oil - 2 tbsp or more if reqd
Salt as reqd

How to make:
Throw in all the ingredients into a jar n blend until smooth add more oil if the hummus is dry. 
What you need for Sandwiches:
What Bread pref - 4 nos
Hummus 
Cucumbers, Tomatoes, Olives n Jalapenos

How to make:
Toast the bread spread generous amount of hummus on both the slices arrange veggies and serve warm!! 

SOYA MEAL N BELL PEPPERS MASALA RICE

If i don't have my proper dose of food n sleep the earlier nite the next day it reflects in my cooking .. yupp i end up doing a stir fry rice / masala rice for lunch. My SH does not prefer such dry variety rice wen packed for lunch since he had his work from home schedule i ended up making this and hit my bed once my tummy was full for a proper afternoon nap..

There is no such rules to be followed in making a quick masala rice whatever comes out of the fridge n the shelf ends up n def they taste good too.. This is one such saver rice which i made to make my tummy happiee..
What you need:
Cooked Basmathi Rice - 1 cup
Mini Soya chunks - 1/2 cup (cooked)
Veggies - 1 cup (Mushroom, bell peppers)
Onion - 1 no (chopped)
Tomato puree - 1 tbsp
Green chilly - 2 nos + Ginger - 1 tsp + Garlic - 3 pods, crushed
Red chilli powder - 1/2 tsp
Garam Masala - 1/2 tsp
Mint n Coriander leaves - 1/4 cup, chopped
Bay Leaf - 1 no, + cinnamon stick - a small piece + Cardamom - 2 nos + Cloves - 2 nos
Salt as reqd
Oil -  tbsp

How to make:
Heat oil in non stick pan add spices saute well, add the chillies, g n g paste mix well add onions and cook till they turn soft.

Add tomato puree, dry powders, mint n coriander laves saute well add 2 tbsp water and mix em up.

Throw in veggies n soya chunks, add salt mix well. Now add rice stir in and cover it for 2 mins .. remove and serve hot with raitha!!

BURNT GARLIC N OLIVE PASTA

Love such easy pasta recipes and it's my fav wen i have to cook jus for myself.. Made this pasta with loads of chunky garlic and stuffed olives. Sauteing garlic n onions gives a wonderful flavor to the olive oil and it enhances the taste of the pasta. 
 What you need:
2 cups - Pasta (cooked to al dente, any variety)
4 pods - Garlic, slightly crushed 
1 no - Onion, sliced
1 no - Tomato, cubed
5 nos - Stuffed black olives, sliced
Red chilli flakes, Black pepper n Italian herbs, crushed
Salt as reqd
1 tbsp - Virgin olive oil
2 tbsp - Fresh parsley/ Coriander, chopped

How to make:
Heat oil in a pan add onions saute add garlic, olives, red chilli flakes, black pepper and roast well. Now add tomatoes cook for a min and immd add salt and more pepper if reqd and add basil / coriander and add the pasta give a stir and serve hot!!

OATS WHOLEWHEAT CHOCO BANANA PANCAKES

Pancakes for breakfast tats way too unusual at my place... Was given Oats and Banana as secret ingredients by Sanoli Gosh for tis month "Shhh Cooking Secretly Challenge" organized by Priya Suresh of Priya's Versatile Recipes. 

So made these Oats Whole Wheat Choco Banana Pancakes and drizzled with chocolate syrup and chopped bananas they made yummy, healthy n filling breakfast.  
What you need:
1/2 cup - Oats, dry roasted n powdered
1/2 cup - Wheat flour
1/4 cup - Milk
1 no - Banana, peeled n pureed
1 tsp - Flax meal
2 drops - Vanilla essence
1 no - Egg white
2 tsp - Dark chocolate chips
1 tsp - Coconut flakes
1 tsp - Oil
pinch of baking soda
pinch of cinnamon
pinch of salt

How to make:
In a bowl add in milk, egg white, vanilla essence, banana puree, oil and whisk well. Now in a deeper bowl add flours, flax meal, baking soda, choco chips, coconut flakes, cinnamon, salt and mix well.

Add the wet ingrd to the dry ones and make into smooth batter if reqd add milk.

Pour a ladle full of batter on a tava drizzle oil around the corners once half done flip it and cook till done on the other side

Arrange the pancakes on a plate layer chopped bananas and drizzle chocolate syrup or honey as you wish and sprinkle gen coconut flakes and dig innn!!!

WHEAT BRAN PUDDING

New pick by me from the Organic store..wheat bran.. They make a great breakfast option and also offers dietary supplements n energy reqd for the body.. No cooking is reqd jus throw in fruits, nuts, yogurt mix it and your breakfast is done.. My sweet craving tooth needed some changes so made tis quick pudding n m done with lesser calories..
What you need: Recipe inspired from ecurry
1/4 cup - Wheat Bran (fine variety)
1/2 cup - Milk
2 tsp - Organic Brown Sugar
2 tbsp - Mixed nuts n dry fruits, chopped
2 drops - Rose essence
1/4 cup - Any fruits of your choice

How to make:
Heat milk and sugar in a pan and cook till they thicken add wheat bran mix well and switch it off.

Add nuts, rose essence and chill it.. Serve chilled with fruits of your choice !!

SPICED ORANGE SALAD

It's been a while i stepped into my blog page.. too many silly reasons behind.. now m all geared up n thr comes out fresh from my kitchen spiced up orange salad with some mint green tea which i made for my mid morning craving..

I don't prefer a elaborate dressing for my salads.. jus squeeze up some lemon juice, sprinkle some salt n pepper  n m done..
What you need:
3 nos - Oranges, sliced n then peeled
1/2 no - Onion, sliced
1/2 no - Tomato, sliced
1 tbsp - Mint n coriander, finely chopped
1/2 tsp - Lime juice
Red chilly flakes as reqd
Salt n pepper as reqd

How to make:
Arrange sliced oranges on a plate and add onions n tomatoes n sprinkle lime juice, mint, coriander leaves, salt, pepper and chilli flakes and serve chilled!!
