Sindhi Koki is a flat bread using wheat flour and it is so simple to make with very less ingredients available at home. Also made avocado chutney which paired up well.
What you need for Koki: (Recipe Source - TV show)
2 cups - Wheat flour
1 cup - Cucumber (grated; do not discard the water, remove the seeds before grating)
1 no - Onion (grated)
2 nos - Green chillies (finely chopped)
2 tbsp - Coriander leaves(finely chopped)
1/2 tsp - Cumin seeds
Salt as reqd
How to make:
In a bowl add all the ingredients and mix them well the dough will not be soft since water is not added just roughly mix them and rest it for 20 - 30 mins.
Now mix them well as the cucumber tends to leave more water and make them into soft dough if reqd jus sprinkle some water.
Roll the dough and cook on a hot tawa on both the sides by adding very little oil.
Serve hot with avocado chutney!!!
What you need for Avocado chutney:
1 ripe - Avocado
1 no - Onion (roughly chopped)
1 small bunch - Fresh Coriander (washed and chopped roughly)
1/4 cup - Coconut grated
4 nos - Green chillies
Salt as reqd
How to make chutney:
Cut the avocado and scoop the pulp.
In a pan dry roast all the above ingredients till soft and let it cool down. Once it cools off grind to smooth paste by adding very little water and serve with Sindhi Koki.
